Soloed at 66bst/33whm. Used Fungar pets, and jsut attacked whatever one was able to take hits. They change between immune to magic and to phyical every 20-30 secs. I don't think they are 60-65, since I was able to kill them both with 1 fungar. While doing quest, key a key from the cutters and the room next to the 2nd crap (has a lizard in it..the only room that does) will be the real chest for the map of the area. Wrong chest = mimic, and there's are a LOT of fakes.

I spawned these guys as RDM64/BLM40 with my WAR50/THF25 friend.
Yes, it's true, they spam silence. However, they almost never land it. They did land it once, but then I remembered I could put up Barsilence and Baraero, and it wasn't a problem after that.
Shock Spikes is more of an inconvinience than silence, since they like to spam that too. Dispelling it is essentially a waste of MP, because they'll recast it almost immediately. The problem with it, though, is the stun effect of the spikes go off a lot and it makes it tough to switch between the two gargoyles when they switch invincible.
I'd imagine a level 64 RDM could solo these guys- the WAR just provided some additional damage, I still had about 150 MP left by the time we were done.
Important notes: You'll definitely want Haste, Stoneskin, Enthunder, Protect, Shell, and Phalanx up at all times. If Phalanx or Stoneskin drop, you run the risk of being stunned by Shock Spikes and you'll start taking a lot of damage.
Try to pull the Gargoyles as far into the corner as possible. We fought on the platform on which they spawn and near the end of the fight we got magic aggro from a Magic Millstone. If this happens, Sleep II the millstone immediately and begin using it for Aspir. If you have the spare MP, silence the millstone too incase it wakes up without you noticing. Firaga II hurts.
