Are all ZM's needed to be finished in order to acess Sky? Or is there a certain mission you get to where acess is granted?

I'm pretty sure you only need up to 11.

how exactly did you manage to get a Zilart "Quest" without being rank 6 as other users have stated Zilart MISSIONS arent available until you have Rank 6

actually you can be rank 5 to get the missions, but you have to beat the shadowlord afterwards you'll get a CS and then be able to do... however after beating the shadowlord all you have to do is talk to your mission npc in your hometown to get rank 6

Read it again... he said quest, not Zilart quest. Quests tend to be based on fame and prerequisite quests, and have little or nothing to do with Rank, Missions, or Level. Exceptions being the Limit, AF, Subjob, and Advanced job quests.
It could be that you only need to have enough Kazham fame (built on Windurst fame) to receive it, I can't verify this though as I'm currently only Rank 5, but I do have level 9 Windurst fame so I might try it.

Granted he said quest, and that there are some quests that involve talking to the Chieftaness, but the above "quest description" is in fact for ZM3. *Possible spoilers* After you talk to Gilgamesh for ZM2, he tells you to go talk to the Chieftaness in Kahzam for assistance so you can meet up with Gilgamesh in the Temple of Ugg-something-or-other (the one in Yhoator Jungle). When you talk to the Chieftaness for ZM3, she references Gilgamesh and gives you the Sacrificial Chamber Key. This is in fact a continuation of the Zilart Mission storyline, but you will only be able to access it after having rank 6 and completing ZM1-2. Good luck!
When can we start these missions?
# Aug 05 2004 at 8:33 PM Rating: Decent
Do we have to wait until we finish all the normal FFXI missions before we can start these Zilart missions, or can we start the Zilart missions as soon as we get to Norg for the first time?

you don't get Zilart Missions until you are Rank6 (after defeating the Shadowlord).
In case you're wondering...

This is known as Zilart Mission 3.

I'm unclear as to the origins of the Zilart Mission numbering scheme, but in essence many of them are mere cutscenes for you to follow, with no rewards except for the loot you collect along the way (you get the Opo-Opo Necklace during ZM5, for example) and an advancement of the super-cool storyline. Talking to Kazham's Chieftaness sends you to Uggalepih Temple for Zilart Mission 4, the first one that involves any fighting. Quick summary (MILD SPOILERS):

ZM1: Travel to Norg, see cutscene, get map of Norg
ZM2: Talk to Gilgamesh in Norg
ZM3: Talk to Kazham Chieftaness
ZM4: Get 4 unlit tonberry lanterns, Uggalepih key, fight way into Den of Rancor, kill 3 tonberry NMs
ZM5: Collect 7 prayers from headstones around the world. Some are guarded by NMs.
ZM6: BCNM fight in Chamber of Oracles. 3 Antica NMs
ZM7: Cutscene that follows ZM6
ZM8: BCNM fight in Stellar Fulcrum (major boss fight)
ZM9: Talk to Aldo, then Gligamesh
ZM10: Examine Cermet gate in Hall of the Gods
ZM11: Talk to Gilgamesh again
ZM12: Talk to mithra in Rabao. Form alliance, kill a nasty NM in Quicksand Caves. This is the famous 'Mithra and the Crystal' Zilart Mission
ZM13: Enter Tu'Lia (congratulations!)
ZM14: Ark Angel Fight. One at a time or all 5 at once, your choice.
ZM15: Talk to Gilgamesh (again) and then head for Ru'Avitau Shrine (home of Kirin ^^)
ZM16: Work your way to the Celestial Nexus. Not as easy as it sounds. Even 75 players do this with sneak/invis the whole way.
ZM17: Final boss battle, and the end of the Zilart Missions.
