I m not sure if I m reading it wrong, but can you gain merit points for each job you have, or is there an endless amount of merit points you can gain to boost whatever job you re on? Or is there only so many points total you can have all across your jobs. Just don t want to ***** it up.

you can't assign merit points to a job until it is over level 75. You can earn merit points on any job and apply them to any other job over 75. There are limits on individual merit point categories for each job/section but you can max out every job's available merit points, and merit points for every section - it's not restricted at all in that way.
So you can max out the total number of points in the weaponskills category, and max out your blue mage merit points, but that doesn't stop you from putting points elsewhere if you know what I mean

You can't mess it up because you can always lower your merits if you want. You can get merits on any job and spend them on any job.
HP/MP/Merit Limit, Attributes, Combat/Magic skills, and Weaponskills have a limit that applies to all jobs. Each job then has a set of job-specific merits that has its own limit.
Don't confuse merit points with job points, which are completely job specific and must be earned on a particular job.
