Whenever you attempt to charm a mob, you have a chance of failure. The day and moon phase seem to have a factor in the success rate of your charm as well as relative mob level and your CHR. Of course this assumes that the mob you're trying to charm is a type that can be charmed.

If the pet is equal or lower than you in level and you have sufficient CHR (while you do the charm - switch to better defensive/offensive gear after), the charm will generally hold long enough for the pet to die while fighting your enemy mob.

At some point with all charmed pets (that don't die to an enemy first), the charm will be lost and the former pet will attack you - usually starting off by using a TP attack/WS (if it has enough TP built up). Almost always, you can immediately re-charm your pet and command it to attack your foe... but there's always the chance that it will wear. The most common cause of death for me as a BST so far (28) has been when I lost charm on a pet mid fight and failed in re-charming the first time... and the second time. You should be able to survive your pet and the mob hitting you for enough time to retry the charm. But normally you will re-charm a pet that you did the first time... even if it's higher level than you.

If you have enough CHR, you can use this to your advantage... you can charm T mobs as pets and have them attack T+ mobs. Go through 2 or 3 pets per mob and you can come out with up to 200 XP solo. Yes those are often scary fights; but if you can switch from old pet to new pet fast enough and finish the mob off with a WS when it's almost done, your charm usually will hold long enough for your pets to die since they are going up against a tougher mob. Although the XP is based on the highest level pet you charm, you can still get huge XP relatively safely - cause you will lose a few charms doing this and will die a few times too. Oh well... that's part of being BST.

I digressed a bit from your question; yes, normally when you re-charm a mob, you do regain control of it for another several minutes or whatever based on the factors involved in the initial charm and a bit of randomness.

I just got Beastmaster today, mainly to use as sub for farming with my BLM(lvl 42). But what levels should be charmed with BST as main? Only EM or less?
heh heh heh

Charm pisses mobs off more than voke when you don't stick it. I subbed my lvl 3 bst to my lvl 68 nin and I never came CLOSE to losing hate as long as I spammed charm every 15 secs and I didn't have to use any emnity gear. With the extra 10 eva I didn't have to reacast utsusemi NEAR as often.
Charmin and NM

Can you charm an NM monster, or does it just make the NM attack you?

Does Charm Claim?

If you cast charm and it fails, is the monster 'claimed' or does it just attack you with a yellow name?

The monster is claimed. Also note that if you charm a beastman, it obviously won't work...but it does have a good chance of binding them! I have no idea why, but it's good for a quick getaway (Note: you can't use charm when you have a pet, even on a beastman)

No. It lasts depending on the level of the monster. EM lasts about 3 minutes. Anything lower lasts longer. Anything higher is dangerous to charm.

Just so you know, I have seen the Gigas Beastkeeper in Qufim casting Charm on PLAYER CHARACTERS. Be warned. (He spawns as NM when you're doing the EF along with 3 other Gigas NM which is not currently listed in the Bestiary)
