These sell for about 12 gil a peice to NPCs, in case anyone's wondering.
I just dinged 31 Cooking on Salmon eggs, so I think that the lv 30 cap may be wrong, if I'm not mistaken.

The cap is stated so that you wount try to skill on something that wount give you any points. And if he said he got skill up over 30, the cap is not 30.
