i had a run in with this guy when i was "exploring" (actually i was looking for Jormungand just to see my first HNM dragon -_-) so i was using oils and powders and i saw this guy decided to get a closer look and as soon as i got like a foot near him he starts attacking me. i had no idea what its lv was and i was 60drg/30blm i tried to fight it but it double attacks if im correct and it was hitting me 80-100 damage so i warped my *** out of there lol.
Bleh... I've had plenty of testing with tauruses, both on purpose and accidentally. Here's what I can tell you:
They do not aggro to sound at all. I've snuck past them in the narrow hallways of Phomiuna Aqueducts while their backs were turned, but getting plenty close enough to trigger sound aggro. They also don't aggro to magic or low health (keeping true to the magic = arcana, low health = undead rule).
They will spot you straight through invis. Yes, even if you have deodorize up. (Yes, I tested this. Because of the next point...)
They'll spot you through Hide, if you're a thief. Even if you have deodorize up. So not only do they have truesight, they have truescent too. My roommate argues with me on this one, claiming an alternate theory where "mob has truesight = Hide fails". It makes more sense to me that Hide doesn't have a special condition like that, and is instead failing because the taurus still has me on scent tracking, because deodorize isn't enough to block it - similar to how invis didn't work to stop the aggro in the first place. I'll need to test Hide against some goblin or yagudo with truesight to provide evidence one way or the other.
You can lose a taurus by getting far enough away that it doesn't have you on sight (say, with Flee), then crossing water to break your scent trail. I've done this against the ones in Phomiuna Aqueducts, where there's water handy in the middle section.

At some point, True Sight and/or Hide were changed so that you cannot Hide from True Sight mobs. I have personally attempted to Hide from the Yagudo High Priest and recieved the message: "Ibihni attempts to use Hide, but is spotted by the Yagudo High Priest."
You can actually avoid Doom if you're not facing him. So either tank backwards, or stay unlocked and spin around when you see it cast Mortal Glare (or Mortal Stare, or something like that). You'll get the message "Doom has no effect on..."
Also, if Doom connects and starts counting down Cursena/Holy Water won't always work. Each cast/item only gives you a chance to get rid of doom. My tank once ate 3 Holy Waters + 4 Cursena and still got killed. XD So yea... avoid if possible.
Definatly has True Sight. Was exploring here and the mob aggroed me when i had sneak and invisible on. Maybe try deodorize? Didnt really think it was useful but might be worth a shot.
Yes... can see through sneak and invis, but I got some nice pics of it standing over my dead body... lol. Took down a 52 WHM in 4 hits, no stoneskin, with Holy Breastplate. All hits between 160 and 200.
68-71 from what I heard [non-confirmed] Aggros True Sight, Through sneak and invisible, and can take down a sightseeing Mithra RDM @ lvl 50 in 3 hits. [no stoneskin]
True sight...wish I knew this before it killed me. They con as T to a 67 and have some badass TP attack that obliterated 40% of my pet, which was a T Raptor I 2 hr'ed.
