I just finished fighting this as a 42 PLD/RDM with my lvl 38 attacker NPC
Now i know NM's are tougher than monsters the same lvl as them, but I only just managed to bet this with about 40 hp and 3 mp remaning! This makes me think the NM must be around lvl 42, perhaps higher!
I took RDM as sub, mainly for the spells i knew i'd get, En-spells, Blaze Spikes, Aquavel, and I dont think I'd have beaten it without them. I couldnt get a silence to stick, so I decided not to waste my time. I Shield Bashed it when it was preparing some crazy aga II spell (didnt stop him hitting me with a different aga spell 2 sec's later ^^)
Anyway, he was hitting me really hard considering my defense and his magic was quite devastating, but i managed to hold out, SC'd with my NPC and then got dropped to about 10% health whilst he was on 33%. I hit invincible, then laughed as he aga spell'd me again dropping me to 20/770 HP /panic! Luckily for me i got 100% TP just as invicible wore off and i Fast Blade'd him to death!
Just to let people know this is doable at lvl 42, but it was dam hard.

I defeated this thing without too much trouble as a mithra RDM50/BLM25 with the help of level 39 NPC in attacker mode (with the fourth great axe upgrade). It took probably 2 or 3 minutes. I was wearing my soloing gear (Brigandine and such) and wielding a Rose Wand +1 (I wanted to be sure that Silence would land) with somewhat underleveled club skill. I fully buffed before starting the fight, but didn't bother killing the surrounding goblins for TP.
Once the fight started, the pot immediately tried to Sleep II me, but a shadow got it, and I used Elemental Seal + Silence to stop further spellcasting on the NM's part. I had to recast Silence a couple of times during the fight, but it definitely helped prevent a lot of trouble; I ended the fight at over 3/4 life without curing once, and the pot didn't get a single troublesome spell off. MP was somewhat low but I wasn't close to needing to Convert. My NPC was another story, as I forgot to Shell and Protect her once she showed up, and she got hate partway through the fight; she was taken down to about 1/3 HP. Had it been necessary, I could have cured her back to full and taken hate back, but the pot died before that could happen.

on a scale of 1-10, 10 being the toughest fight you colud be in, and 1 being a tiny mandy in sarutabaruta, i'd give this a 4. 50SMN/25WHM, stoneskined and blinked, summoned shiva and examined the ???, it comes out casting Stonega II, interrupted by shiva, used Double Slap, 457 Dmg. Shiva was doing great damage, my 38mnk NPC was doing average dmg, fight lasted a minute, time for 2 double slaps. HP is around 1600-1800. I took no damage, shiva was at around 60% hp, npc was full health.

Soloed this last night as a 59BRD/29WHM. Was extremely easy. Hope that info helps.

OK I'm a lvl 56 PLD/WAR this fight was easy for me. I just did normal buffs and had a boiled crab.
This fairly easy mob must be defeated towards the end of the Chameleon Capers quest; the genkai quest which upon completion, will allow your NPC to level from 55 to 60.

I would hardly call this mob "fairly easy". I did it as a Galka WAR/NIN 54 and got some TP from nearby bats and gobs. I spawned the mob, did the normal buffs of Beserk, Warcry, etc.. then did a 300TP Spinning Axe. Really pi$$ed off the pot and it started to do Stonega II ... Firega II and one other II-ga spell that I forget. My HP went from ~1200 to 500 in about about 10 seconds. After that it went down pretty easy. I talked to someone else that did it and the pot only casted Bio on them >.>
It's not G2, it's the quest to get your tactics manual for the upgrade combat styles. The G2 quest involves fighting a Giant NM in Qufim.

Do we even know where it is? Is it for a mission or quest? Does it drop anything, if it's not?

It is found in Lower Delkfutts tower. I've seen it spawned, but I'm not sure about if it is for a mission or simply one of the new NM's
